One problematic issue with buffet-style service is the use of tongs. Not a very attractive utensil, tongs get covered in food and there is nowhere to put them when you want to keep the food hot. My solution is one very simple wood piece that gives you a place to rest up to 3 tongs in a nice way. You can use one, two or three rests to hold tongs, serving spoons or forks. No more hanging dirty tongs off the sides of hot hotel pans.
